Lotus Root & Peanut Soup

Hidden from all eyes, embedded in the bed of a lotus pond, are the roots of the lotus.

Roots of the lotus or just called Lotus Roots, is sweet in nature. It can be eaten fresh, stir-fried or in soups.

I love mine in the form of soup and having it with white rice. This is a home recipe taught by mom - look for matured lotus roots for deeper and richer tasting soup and do add some peanuts for a nutty taste.

I have tried using younger lotus roots but the taste was rather bland and lacked the deep rich taste.


300g Lotus Root
200g Lean Meat or Pork Ribs
10  pcs Red Dates
4-6 pcs Dried Oyster
1-2 pcs Scallop
1 pcs Dried Octopus, about 3 inch by 3 inch in size
1L -1.5L Water
Salt, to taste

1. Bring water to boil. Add Lean Meat or Pork Ribs. Remove layer of scum from surface.
2. Once water boils again. Add rest of ingredients
3. Simmer over low fire for 2.5-3.0 hours.
4. Add Salt, to taste
5. Serve.
