Winter Melon and Barley with Pork Ribs Soup

Came across this recipe from a Chinese recipe book quite a while back but never quite got around to trying it. Now, since I am back at my stove, its experimenting time.

Hmm, admittedly, I was a little too enthusiastic with the barley which gave it an overpowering barley flavour, so do be gentle with the amount used when making this soup.

Verdict: M found the taste a little unique for his palate as he normally associates barley with desserts and sweetness. Looks like if I am to make this soup again it will be when he’s not having a meal at home!

300g Pork Ribs
50g Barley
150g Winter Melon
3pcs Honey Dates
1L Water

1. Soak Barley for a couple hours and drain.
2. Cut Winter Melon into smaller pieces. Do remove skin.
3. Scald Pork Ribs in boiling water. Remove Pork Ribs and rinse. Throw water.
4. Bring Water to boil. Add Pork Ribs, Barley, Winter Melon and Honey Dates. Bring to boil and lower heat to a simmer for about 2 hours.
5. Salt to taste.
6. Serve.
